LEXINGTON, Ky. (FOX 56) – Restaurants are among the hardest hit during the pandemic. Many continue to struggle to adjust as the political, social, and economic climate in the U.S. is still changing as a result of COVID.

Even some iconic Lexington establishments could not make it through the hardships of the pandemic as Alfalfa and Cork & Barrel closed their doors in 2020.

Many closings have been attributed to labor and supply chain issues.

Fortunately, a flame has risen from the ashes. 45 new restaurants have opened in Lexington in the year 2021.
