Ingredients
1 whole cucumber, peeled and diced (seeded if needed)
1 cup diced jicama
1/4 red bell pepper, diced
1/4 orange bell pepper, diced
1/4 yellow bell pepper, diced
1/4 onion, diced
1/4 cup cilantro, chopped
1/2 tsp salt (we used Lime Fresco salt), plus more to taste
1/4 tsp chili powder
2 tsp hot sauce, or more to taste
Juice of 1 lime
Instructions
In a large bowl, toss all the vegetables with the cilantro, salt, chili powder, hot sauce, and lime juice. Season with additional salt and hot sauce to taste.
