1 bunch broccolini, cut any thick stems in half lengthwise

Olive oil

Salt and pepper

1 tbsp honey mustard

1 tbsp olive oil

1 tsp cider vinegar


Preheat the oven to 400 degrees. Toss the broccolini with olive oil, salt and pepper on a baking sheet. Roast until tender, about 15-20 minutes. Make a quick vinaigrette by whisking the honey mustard with olive oil, vinegar, salt, and pepper. Drizzle over the broccolini and serve.
